It is not news that the cuisine of America and the cuisine of Mexico are quite different things. Mexican food recipes, for example are certainly not all that similar to those found in America. Strangely enough, Canadian food is rather similar to our own, as is often the case with neighboring countries – so why is the culinary tradition of our southern neighbor so different than ours? History
There is a historical reason for the difference, which is in large part responsible for this difference. As everyone knows, Mexico was formerly a Spanish colony until winning their independence. However, as you probably also know, parts of the United States were also once Spanish territories! As it happens though, these regions (largely in the southwest) do bear a distinct influence from the Spanish colonial period, though not to the extent seen in Mexico since they have long been part of the US.
By contrast, what is now the United States was largely colonized by immigrants from Northern Europe, especially the English, Dutch and Germans, with French settlers in some areas and later on, immigrants from eastern Europe and Scandinavia – and to a lesser extent, literally every other part of the globe.
European settlers arriving in Mexico came largely from Spain for a long time, having a much larger influence on the diet of the country than any single immigrant group in the United States ever did. In fact, many traditional Mexican recipes are directly from Spain or are adaptations of Spanish classics using local ingredients where the ingredients used in Europe were unavailable locally. The predominant influence of this one cuisine led to a mixture of Spanish and native cuisines, which evolved into what, we now know as Mexican food.
Mexico has also seen a large number of immigrants arrive from the Levant (especially Syria and Lebanon), adding a few dishes which are now classic Mexican food recipes in their own right such as al pastor. This dish is essentially a Mexican take on the middle eastern shawarma.
While the US has had many immigrants from many different parts of the world, the diversity of the US population as compared to Mexico’s has meant that the cuisine of Mexico has remained more distinct than that of its northern neighbor. This by no means, means that Mexico is a place where foods from other countries is not enjoyed and adapted to local tastes either.

The second reason for the difference between Mexican and American cooking has to do with geography. Just as the first European colonists in America learned to use the local produce as well as importing their own, early settlers in Mexico adapted to local ingredients and the native and Spanish cuisines melded into something all its own. Since the country has a warmer climate, different ingredients are easily available, with corn, chili peppers, pumpkins, and other crops, which have been cultivated there for millennia and imported crops, which grow easily in the country.

One simple tool can really make pasta making fun, and that is a pasta machine. There are electric models as well as the more familiar hand crank types, but either version will make delicious pasta and make the process easier. The big advantage a pasta maker has over the hand roll method is that you get a consistent thinness throughout the dough and the dough becomes very stretchy, which is a quality you are looking for. If you are going to mix the dough by hand, start by placing the flour in a large bowl and make a well in the center. Crack the eggs into a smaller bowl and beat them lightly to break the yolks. Add the oil and water and mix well before pouring the liquids into the well in the center of the flour. Continue to mix with a fork or a wooden spoon until the dry ingredients are moistened and begin to clump together. Now roll up your sleeves and get ready to get your hands on the dough to finish the mixing.
Lightly dust flour onto your hands, to prevent sticking, and grab one part of the clump. Fold that part onto the center of the dough, press down and out toward the rim of the bowl. Continue to fold and press the dough and rotate the bowl as you do so until the dough no longers sticks to the sides and you have one piece of dough. Turn this out onto a lightly floured surface and knead the dough for 2 to 3 minutes longer, turning and folding the dough into intself. This activates the gluten in the flour which gives the dough its elastic properties.
You are done kneading when the dough is soft throughout, you can’t feel any lumps, the surface has a sheen to it and it feels and looks smooth. If the dough seems too sticky add a little flour, a little at a time, while you are kneading. If the dough seems too dry or hard, sprinkle a little water on the dough and continue to knead it until it becomes soft and pliable. When you have finished kneading the dough, give it a rest by letting it sit on the board covered with a clean, soft kitchen towel for about 30 minutes. This will relax and soften the dough so it will be easier to roll out.
Divide your dough into quarters and work with one piece of dough at a time. The general idea is to start rolling the dough through the thickest setting on your pasta machine, gradually decreasing the setting to roll a thin sheet of pasta. If you are making raviolis you will place the filling on one sheet of pasta, cover it with a second sheet and then use a pastry wheel to cut between the ravioli squares. All pasta maker machines come with some attachments for cutting the pasta into other shapes like tagliatelle and tagliolini. Some of the electric ones will also provide an extruding attachment for making rounded shapes like spaghetti and capellini. You can even cut the sheets by hand into strips that are 1 1/2 inches wide, like papardelle.
Once you have cut your pasta into the desired shapes, gently take the pasta and dust it lightly with flour. Let the pasta sit undisturbed on a baking sheet or bread board for the surface to dry a little before cooking. You can cook your pasta straight away, and enjoy it with a favorite sauce. If you are making more than enough pasta for one meal you can dry little “nests” of pasta and use them within a few days, or you can freeze them. Some people prefer to use pasta drying racks, which will dry the pasta in long strands rather than little nests.

Be sure to check that your stainless roaster can stand up to high temperatures from the burners on your stove and also the near-broiling temperatures required inside your oven. With roasting meat comes the desire to make gravy, and it is easiest to place your roaster on the stove top and go. In addition, you may need to brown the meat on the stove top before placing it in the over. Warping or buckling are symptoms of an inferior roasting pan placed on a stove top.
